Pina Colada Chews

5 c. flour
2 1/2 tsp. salt
1 lb. butter (4 sticks)
2 tsp. baking soda
1 1/4 c. light brown sugar
1 1/4 c. white sugar
3 tsp. vanilla
4 eggs
1 c. chocolate chips
2 c. shredded coconut
1 c. dried pineapple, diced
2 c. macadamia nuts, chopped

Mix dry ingredients in a bowl and set aside. Mix sugar and softened butter in food processor or hand blender. Add vanilla and eggs. Slowly add dry ingredients. Add pineapple, macadamia, and coconut. Do not over mix. Spoon 12 cookies onto cookie sheet and bake at 275 degrees for 15 to 17 minutes. While cookies are baking, melt chocolate chips on a double broiler. Spoon melted chocolate chips into a pastry bag and drizzle chocolate over warm cookies. Allow to cool and enjoy. Makes approximately 5 dozen large cookies.
