Macadamia Lemonade Cookies

2 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1 c. light brown sugar, packed
1/2 c. white sugar
4 oz. cream cheese
1 egg
4-5 tsp. fresh squeezed lemon juice (one medium lemon)
1 c. coarsely chopped macadamia nuts
6 oz. coarsely chopped white chocolate

In a medium bowl, combine flour, baking soda, and salt. Mix will with wire whisk and set aside. In large bowl, blend sugars well with an electric mixer set at medium speed. Add butter and cream cheese and mix to form a smooth paste. Add the egg and lemon juice. Beat at medium speed until light and soft. Occasionally scrape the sides of the bowl. Add the flour mixture, blend at low speed just until combined. Add white chocolate and macadamia nuts. Do not over-mix. Drop by rounded tablespoon onto ungreased cookie sheet. Bake at 300 degrees for 23-25 minutes. Top cookies by dipping a fork into the frosting and making stripes or smiley faces. Makes 3 dozen.

Frosting:
3 oz. white chocolate
1 tsp. lemon juice
1/2 fresh squeezed medium-sized lemon

Melt chocolate in microwave for about 30 seconds. Take out, stir in lemon juice. If necessary, cook for about 10 to 15 seconds more.
