Ham and Scalloped Potatoes

2 1/2 c. diced ham (Cure 81 is best)
8 medium potatoes, sliced
1 onion, sliced thin (or chopped if baking)
1 green pepper, chopped fine
Salt and pepper to taste
1/2 c. cheddar cheese, grated
1 can Cheddar cheese soup

Layer ham, onions, potatoes, and peppers in slow cooking pot. Sprinkle with cheese. Pour soup over all. Cover and cook on low 8 to 10 hours or on high 4 hours. Can bake in 9X13 pan for 1 1/2 hours at 350. Cover with foil.
