Sweet 'N' Sour Chicken

4-5 chicken breasts
8 oz. Russian dressing
8 oz. apricot preserves
1 onion soup mix
1/4 c. water
1 can pineapple chunks
1 green pepper, sliced
1 sliced carrot, optional

Put chicken in baking dish. Mix Russian dressing, preserves, and other ingredients. Pour and cover all chicken pieces. Cover and bake 1 hour at 350. Uncover last half hour and add pineapple and green pepper.
