Zucchini Bread

3 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 3/4 cup sugar
2 med. Zucchini
(shredded, 2 cups)
2 tsp. vanilla
1 tsp. salt
3 eggs
1 T. cinnamon
1 cup oil
1 T. lemon rind
1/2 cup nuts (optional)

Put all the dry ingredients in a bowl and stir to mix. Beat the eggs, lightly in a large bowl, stir in sugar, oil, zucchini, lemon rind, and vanilla. Add the flour mixture, blending thoroughly. Stir in nuts. Spoon batter into 2 well greased loaf pans. Bake @ 350 for 50 minutes or until a toothpick stuck in center comes out clean. Cool in pans or 10 minutes. Make 2 loaves, share 1 with a friend or put in freezer.
