1 chocolate cake mix
1 can sweetened condensed milk
2 (1 oz) squares unsweetened chocolate, melted
1/2 cup cold water
1 (3.9 oz) package instant chocolate pudding mix
1 cup heavy cream, whipped
Preheat oven to 350. Prepare and bake cake according to directions for two 9-inch layers. Cool and remove from pans.
In a large bowl, mix together sweetned condensed milk and melted chocolate. Gradually stir in water, then instant pudding until smooth. Chill at least 30 minutes. Remove from the refrigerator and stir to loosen. Fold in whipped cream and return to refrigerator for at least another hour.
Place one cake layer onto serving platter. Top it with 1 1/2 cups mousse mixture, then cover with remaining cake layer. Frost top and sides with remaning mousse and refrigerate until serving.
This is a great alternative with chocolate cake with chocolate frosting. The mousse is so light and creamy.
