Cheesey Soup

1/4 c. butter
1/2 c. diced onion
1/2 c. diced carrots
1/2 c. diced celery
1/4 c. flour
1 c. grated cheddar cheese
1 1/2 T. cornstarch
2 T. parsley
1 qt. chicken stock
1 qt. milk
1/8 tsp. soda

Melt butter, sauté vegetables until soft. Blend flour and cornstarch and add to vegetable mixture. Add stock and milk - stir constantly until boils and thickens. Blend in soda and cheese, season. Heat through.
