Chili

1 lb. ground beef
2 T. oil
2 cloves garlic
1/4 t. cayenne
1/2 t. chili powder
1 t. cumin
1 t. oregano
1 green pepper, chopped
1 c. tomatoes (drained, chopped)
4 c. kidney beans cooked ( 1 can)
1 t. salt
1 can tomato sauce (8 oz.)

Brown ground beef and drain off fat. In a large soup pot mix all other ingredients and bring to a boil. Add the ground beef. Allow to cook for a few more minutes, or keep it simmering for hours. Add water to dilute (it can be somewhat spicy). Chili is really the best when it can simmer for several hours - most of the day.
