Low Fat Bran Muffins

1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 - 3/4 tsp. cinnamon
2 c. bran cereal (100% bran)
1 1/4 c. milk
1/3 c. brown sugar
1 egg
1/2 c. applesauce

Preheat oven to 400; spray muffin pan. Mix flour, baking powder, baking soda and cinnamon in large bowl. Mix cereal, milk and sugar in another bowl; let stand 5 minutes. Beat in egg and applesauce. Fold in flour mixture and stir until just moistened (batter will be lumpy). Bake 18-20 minutes. Makes about 12 muffins.
