Chopped Pizza

8 Rhodes Texas rolls, thawed but still cold
1 c. diced ham
4 T. chopped green onions
4 T. chopped green pepper
1 c. grated mozzarella cheese
1c. grated cheddar cheese

Place 2 rolls on a cutting board. Top with 1/4 cup ham, 1 tablespoon green onions, 1 tablespoon green pepper and 1/4 cup each of mozzarella and cheddar cheese. Chop everything with a knife until ingredients are mixed into rolls. Lift with a spatula onto greased baking sheet. Shape into a 6-inch chopped pizza. Repeat process for remaining pizza. Cover with sprayed plastic wrap. Let rise 20-30 minutes. Remove wrap and bake at 350 for 20-25 minutes, or until golden. I substitute 3 regular rolls. Other toppings: chopped tomatoes, olives or pepperoni.
