Caramel Cashew Filled Cookies

1/2 c. butter
1/2 c. sugar
1/2 c. brown sugar
1 egg
1/2 tsp. vanilla
1 c. flour
1/2 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1 c. oatmeal
1 c. rice krispies
1/2 c. coconut

Mix butter, sugar, and brown sugar until creamy. Then add egg and vanilla. Last, add flour, baking soda, baking powder, salt, oatmeal, rice krispies, and coconut. Press about 1/2" in the bottom of a greased muffin tin. As the cookie bakes it will rise and then sink in the middle, leaving a little dish. Bake at 350 degrees for 10 minutes or until slightly browned. Fill each cookie shell with about 1 teaspoon of filling. Let cool. Dip in chocolate and let cool. To stripe cookies, put melted white chocolate in a squeeze bottle. Makes 2 dozen

Filling:
1 lb. caramels
2 T. milk
3/4 c. cashews (coarsely chopped)

Melt caramels and milk on low heat. Then add cashews.
