Beef and Vegetable Soup

1 1/2 lb. ground beef
1 or 2 onions, chopped
2 stalks celery, diced
1 green pepper, diced
Pepper to taste
5 med. Carrots, diced
5 med. Potatoes, diced
1 T. salt
1 qt. water
1 15 oz. can kidney beans including liquid
1 16 oz. can stewed tomatoes
1 can corn, including liquid
1 17 oz. can lima beans, including liquid
1 6 oz. can tomato paste
2 8 oz. tomato sauce
1/2 tsp. Italian seasoning
1 T. parsley flakes

Use large pan (12 qt. stock pot is good). Brown beef. Add onion, celery, and green pepper. Cook 5 min. Add remaining ingredients and cook covered until tender (10 to 15 min.). Sprinkle parsley on top, if desired.
