Cinnamon Rolls

1 pkg. Yeast
1/4 c. warm water
2 c. milk, scalded
1/2 c. shortening
1/2 c. sugar
1 tsp. salt
5 eggs
7-8 c. flour

Dissolve yeast in water. Scald milk; add shortening, salt and sugar and cool to lukewarm. Beat eggs and add along with dissolved yeast.

Add flour to make a soft dough. Cover and let rise until doubled in bulk; punch down and divide into four portions. Roll out each portion of dough on a lightly floured surface to 1/2” thick.

Spread with butter and sprinkle with sugar and cinnamon - generously.

Roll up and slice in 1” slices. Place on a greased baking sheet. Cover and let rise until doubled. Bake 375° for 15 minutes until golden.
