Bettan’s Chicken

2 lbs. Fresh broccoli
1 pt. Sour cream
3 cups chicken chunks
1 envelope onion soup
4 T. margarine
1 cup whipping cream
¼ cup Parmesan cheese

Cook broccoli in salted water until tender-crisp. Place the margarine and broccoli in a large baking dish. Season with Salt and pepper. Combine the sour cream and onion soup mix. Spread half over the broccoli the top with the chicken chunks. Whip the cream and fold the remaining amount of sour cream mixture and spread over the chicken. Sprinkle with Parmesan cheese and bake @ 350 for 20 minutes, or until nicely browned.
