German Chocolate Cheesecake Bars


So over a year ago, I took Conner to some book fair and came across a fun looking cookbook. After getting home, I marked all the pages/recipes that looked interesting. I had been wanting to try this recipe since I found it. I LOVE German chocolate anything! I finally had an excuse to make them and am glad I did. First of all, they look so fancy (great first impression). Secondly, they are super simple to make. And lastly, they are delish! Very rich, but decadent and a great little treat!


1 1/2 cups graham cracker or Oreo cookie crumbs
1/4 cup sugar
5 TBS. butter, melted
2 (8oz) packages cream cheese, room temperature
1 can sweetened condensed milk
2 oz. unsweetened chocolate, melted
3 eggs
3 TBS. cornstarch
1 tsp. vanilla
1 c. sweetened flaked coconut
1/2 - 3/4 c. caramel ice cream topping

Preheat oven to 325. Combine the first three ingredients in a medium size bowl. Then press evenly in the bottom of a 9X13 pan. In a separate bowl, beat cream cheese until smooth. Add condensed milk, chocolate, eggs, cornstarch, and vanilla; beat for 2 minutes. Pour batter over the top of crust. Bake for 15 minutes. Remove pan from oven. Increase oven temperature to 350. Sprinkle top of cheesecake with coconut and return to oven for 10-12 minutes, or until coconut is golden brown. Remove from oven and cool. Drizzle caramel topping evenly over top of bars. Garnish with chocolate curls and dust with powdered sugar. Refrigerate until ready to serve.
