This is just plain good! It's good to serve on the side, or even added to burritos or enchiladas. It is refreshing and tasty and I haven't met someone who doesn't like it.
1 cup uncooked rice
1 tsp. butter
2 cloves garlic, mined (I omit and just add a dash of garlic powder)
1 tsp. lime zest
1 can chicken brother
1 1/4 c. water
2 TBS. lime juice
2 tsp. sugar
3 TBS. chopped cilantro
Combine rice, butter, garlic, lime peel, broth, and water. Boil. Cover and cook 15-20 minutes. Remove from heat. Combine lime juice, sugar, and cilantro. Pour over hot rice and serve.
