Veggie Lasagna

12 oz. ctn. Cottage cheese
10 oz. pkg. frozen chopped spinach, cooked and drained to directions on pkg.
26 oz. jar spaghetti sauce
2+ cups zucchini, cut and steamed 5 minutes
2 c. mozzarella, shredded
1 c. skim ricotta cheese
8 lasagna noodles

Preheat oven to 350. In medium bowl combine cottage cheese, ricotta and spinach. Coat baking pan with spray and spread 1 cup spaghetti sauce on bottom. Top with a layer of 4 noodles and half of cottage cheese mixture. Top with a layer of each of the following: all the zucchini, 1 cup spaghetti sauce, 4 more noodles. Spread evenly with remaining cottage cheese mixture. Top with rest of spaghetti sauce. Bake, lightly covered, for 30 minutes. Sprinkle with cheese and continue baking, uncovered, for another 15-20 minutes.
