Raema's Rice Pudding


1 qt. milk
1/2 c. rice
1/2 tsp. salt
1/2 c. sugar
2 eggs, separated
1 tsp. lemon flavoring

Scald milk in top of double broiler over boiling water. Add rice and cook for 1/2 hour or until done. Add salt and sugar while mixture is cooking.

When rice is cooked add 2 beaten egg yolks to which a small amount of the hot milk mixture has been added. Cook 5 to 10 minutes. Remove from heat and add lemon flavoring. Pour into Pyrex baking dish and top with meringue (beat egg whites, 3 T. sugar, and 1/4 tsp. vanilla). Put under broiler (with door cracked open) until golden brown; or bake in oven at 350 for 12 to 15 minutes.
