1 1/2 c. ricotta cheese
1 1/2 c. cottage cheese
1 c. mozzarella cheese
1/2 c. parmesan cheese
1 egg, beaten
10 oz. chopped spinach, thawed, cooked and well drained
1/8 tsp. nutmeg
26 oz. spaghetti sauce
1/2 c. water
1 box manicotti noodles
Sausage, cooked

Combine spaghetti sauce (try Hunts "Garlic and Herb" in the can) and 1/2 cup water. Pour 1/2 sauce mixture in bottom of 13 X 9-inch baking dish. Combine cheeses, egg, spinach and nutmeg. Fill noodles with mixture and place in 13 X 9-inch dish. Pour remaining sauce over top of noodles. Crumble cooked sausage on top. Cover and bake at 375 for 1 hour. Uncover and top with 1 cup mozzarella. Bake 5 more minutes. Let stand 10 minutes before eating.
