Chicken and Bow Tie Pasta

1 lb. bow tie pasta
3-4 boneless, skinless chicken breast, cut into cubes
1 1/2 tsp. olive oil
2 garlic cloves, minced
1/4 c. finely chopped onion
1 (28 oz.) can crushed tomatoes in heavy puree
1/2 c. water
14/ c. fresh Italian parsley, chopped
3/4 tsp. salt
1/4 tsp. pepper

Cook pasta according to directions on package. In large, nonstick skillet, brown chicken breasts over medium-high heat. Remove from pan and set aside. In same skillet heat olive oil. Add onion and garlic. Saute for 4-5 minutes. Add tomatoes, water, parsley, salt and pepper. Cook over medium heat for 5-10 minutes. Add chicken and simmer for 30 minutes, stirring occasionally. Serve over pasta.
