¾ cup sugar
3 TBS. cornstarch
3 cups milk
2 eggs, beaten
1 TBS. butter
1 ½ tsp. vanilla
In a heavy saucepan combine sugar and cornstarch, gradually stir in milk. Cook and stir over medium heat till bubbly. Cook and stir for 2 minutes more. Remove from heave. Gradually stir 1 cup mixture into eggs.
Add egg mixture to mixture in pan. Cook till bubbly, reduce heat and cook 2 minutes more. Remove from heat and stir in butter and vanilla. Pour pudding in a bowl; cover with plastic wrap; chill.
* For CHOCOLATE pudding:
Prepare as above except add 1/3 cup cocoa powder with the sugar and only add 2 TBS. cornstarch.
