2 c. Nilla Wafers (crushed)
2 T Sugar
5 T butter ( melted)
Combine and press into a 9 in. spring form pan.
6 T Key lime Juice
1 env. gelatin
2 1/2 c. chilled whipping cream
9 oz. white baker's chocolate
3 8 oz. pkg. cream cheese
1 c. sugar
1/2 T Lime Zest
Place lime juice in a small bowl with gelatin and let stand.
Simmer 1/2 c. whipping cream (save 2 c. for later) until warm enough for chocolate to melt. Combine until chocolate is melted.
Add gelatin mixture to Chocolate mixture and let cool.
In a large mixing bowl beat cream cheese, sugar, and lime zest until light and smooth. Gradually add chocolate mixture to cream cheese mixture.
Whip remaining 2 c. whipping cream to stiff peaks and fold into cream cheese mixture.
Pour into spring form pan and let chill for 4 hours.
