1/3 c. crushed vanilla wafers, or graham cracker crumbs
1/3 c. melted butter
1 c. powdered sugar
1/2 c. butter, soft
2 squares melted chocolate
3 tsp. peppermint flavoring
½ pint whipping cream
3-4 TBS. sugar
Beat whipping cream and sugar together until stiff.
Combine vanilla wafers and butter to make a crust and pat into 8 inch pie pan. Bake at 350 for 10 minutes.
Cream butter and powdered sugar together until fluffy. Add melted chocolate and beaten eggs. Beat well, then add peppermint. Fold in whipped cream and chill until ready to serve, preferably 1-2 hours before serving.
