Chicken Stir-Fry

1 lb. chicken ( 2 breasts)
2 T. soy sauce
2 T. cooking sherry
¼ t. sugar
2 t. cornstarch
¼ t. ginger
1 c. fresh/frozen peas
1 lb. Mushrooms

Cut up chicken and put in sauce of soy, sherry, sugar, cornstarch & ginger. Slice mushrooms & cook in 2 T. oil on medium heat for 2 minutes, remove. Cook chicken & sauce in 3 T. oil on high for 2-3 minutes. Add mushrooms and peas. Serve with rice!
